Tune transformed the car, but what should I log?

2017 Nissan Altima 2.5 SV, about 96,000 miles. Running a conservative tune and the car feels great. I don't want to judge reliability by seat-of-the-pants though. Which parameters would you log periodically—fuel trims, knock, boost target, temperatures, something else? I'd rather test this logically than start replacing parts.
